This Mediterranean quinoa salad is bright, simple, and comes together in minutes when you already have quinoa cooked in the refrigerator.

It’s a great way to stretch 1 cup of cooked quinoa into two side dishes, adding fresh vegetables, herbs, lemon, and a little feta to make it more complete.

The recipe can easily be doubled or tripled for a crowd, making it an easy, fresh addition to summer barbecues or casual gatherings.

  1. Combine the salad ingredients. Add the cooked quinoa, cherry tomatoes, cucumber, and crumbled feta to a medium bowl.
  2. Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, parsley, salt, black pepper, garlic powder, oregano, cumin, and red pepper flakes (if using).
  3. Toss and season. Pour the dressing over the quinoa mixture and toss gently to combine. Taste and adjust salt or lemon as needed.
