Maple and Mustard Chicken

- Preheat the oven: Preheat oven to 400°F.
- Sear the chicken: Spray a large ovenproof skillet with nonstick cooking spray and heat over medium-high heat. Season the chicken with the salt and pepper. Add the chicken to the skillet and cook for about 2–3 minutes per side, until lightly browned. Transfer the chicken to a plate.
- Prepare the sauce: Add the chicken broth, maple syrup, thyme, and garlic to the skillet. Bring to a boil, scraping the pan to loosen any browned bits. Cook for about 2 minutes, stirring occasionally. Stir in the cider vinegar and mustard and cook for about 1 minute, stirring constantly.
- Bake: Return the chicken to the skillet and spoon some of the sauce over the top. Transfer the skillet to the oven and bake for about 10–12 minutes, or until the chicken is cooked through.
- Finish the sauce: Remove the chicken from the skillet and let it rest for about 5 minutes. Place the skillet back over medium heat and cook the sauce for about 2 minutes, until slightly thickened and glossy. Spoon the sauce over the chicken and sprinkle with scallions if using. Serve immediately.

• If the chicken breasts are very thick, slice them horizontally or pound them slightly for more even cooking.
• Use an oven-safe skillet (such as cast iron or stainless steel) so the chicken can move directly from the stovetop to the oven.
• Stone-ground mustard gives the sauce texture and depth, but Dijon can also be used for a smoother finish.
• The sauce will continue to thicken slightly as it cools.
