A simple taco beef skillet that comes together quickly. Using tomato paste and canned diced tomatoes in place of water adds depth and improves both taste and texture without changing the process.

- Heat a large skillet over medium heat and lightly coat with oil spray.
- Add the onion and cook for 4 to 5 minutes until softened.
- Stir in the garlic and cook for about 30 seconds.
- Add the ground beef, breaking it up with a spatula. Cook for 6 to 7 minutes until mostly browned.
- Stir in the tomato paste and spice blend. Cook for 1 minute to deepen the flavor.
- Add the diced tomatoes with their juices. Stir, scraping up any browned bits.
- Simmer for 6 to 8 minutes until slightly thickened.
- Finish with cilantro and lime juice if using.
