A simple chicken recipe that works on a weeknight and easily fits into other meals.

  1. If the chicken is thick, place it in a zip-top bag and pound to about ¼ inch thickness.
  2. Season lightly with salt and pepper.
  3. Place the lemon juice in a shallow bowl. Dip each piece of chicken to coat.
  4. Place the breadcrumbs in a separate bowl and press the chicken into the crumbs, coating both sides.
  5. Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  6. Cook for about 3 minutes per side, until lightly golden and cooked through. Work in batches so the pan is not crowded.

Notes

Kitchen Note

  • Thin-sliced chicken breasts (often labeled cutlets) cook quickly and evenly, removing the need for extra prep.
  • Panko can be used for a slightly crispier texture.
  • Chicken tenders can be substituted for chicken breasts and may cook slightly faster.


Variations

  • Chicken Scallopini: After removing the chicken, add a splash of chicken broth and white wine to the pan. Simmer briefly and spoon over the chicken.
  • Chicken Parmesan: Top with warm tomato sauce and shredded mozzarella, then broil until the cheese is melted.
