Filet mignon has a reputation for being indulgent, but when it’s prepared simply, it can actually be a very balanced choice.

At home, you’re in control. When you skip the heavy butter and keep the seasoning clean, it becomes an easy way to enjoy a restaurant-style meal without the extra richness that often comes with it.

It may feel surprising to make filet mignon in the air fryer, but it’s something I started doing during COVID, when we weren’t going out to dinner and still wanted a good meal at home. It quickly became a favorite in our house and still is. It’s one of those meals everyone agrees on.

An 8-ounce filet cooks evenly and stays tender, making it easy to build a balanced plate around. With simple seasoning, the right temperature, and a short rest, it turns out well every time.

Instructions

  1. Bring to room temperature. Let the filets sit out for 20–30 minutes. This helps them cook evenly.
  2. Season. Pat dry thoroughly. Season generously with kosher salt and black pepper on all sides. If using, lightly coat with olive oil or a few mists.
  3. Preheat. Preheat air fryer to 400°F.
  4. Cook. Place filets in the air fryer basket. Cook for 5–6 minutes, then flip.
  5. Continue cooking for 5–8 minutes, depending on desired doneness.
  6. Check temperature. Use a thermometer for accuracy:
  7. Rare: 120–125°F
  8. Medium-rare: 130–135°F
  9. Medium: 140–145°F
  10. Rest. Transfer to a plate and let rest 5–7 minutes before serving.

Notes

Kitchen Note:

For a deeper exterior, quickly sear the filets in a hot pan for 30–45 seconds per side after air frying.


If using thicker, steakhouse-style filets (10–12 oz, 2–3 inches thick), increase cook time and rely on internal temperature rather than time alone.


Season simply with kosher salt and black pepper, or layer in additional flavor with garlic powder, dried oregano, or fresh rosemary. A light coating or a few mists of olive oil helps the seasoning adhere and promotes even browning.


Serving Notes:

Serve whole or sliced with a simple vegetable or salad.


Avocado, lemon, or fresh herbs balance the richness and round out the plate without making it heavy.
